Letha and Randy Leonard have been cooking Cinnamon Rings for 24 years. They love cooking, and eating these even after all these years. Lots of our customers buy these for Christmas morning. Others use them for parties and family get togethers.
Julie Griego got this recipe from friends in Victoria while living there in the early '90s. She cooked cinnamon pecan rings for years in Lamesa, primarily around the holiday season. When Julie moved in 1997 she passed the recipe along to us and we have been cooking them ever since.
We take three layers of sweeten bread dough, cover each layer with sugar, cinnamon, and your choice of pecan, almond, or no nuts. Cut it into 16 pieces and a center piece. The rings are cooked, placed on a cardboard round then shrink wrapped for freshness. We then place them in the freezer until your order. Each cake comes with 6 ounces of icing for you to top your cake.
Remove the plastic wrap from your thawed ring and cover with foil. Place ring in 250 degree oven for 20 minutes, or microwave individual pieces for 25 seconds at medium power.
Cut a small hole in one corner of the icing bag (about the size of a pencil lead) Squeeze the icing in small circles over the top of the ring. Enjoy!
Remember, you can always make the hole bigger but you can't make it smaller. Start small and increase the size of the hole if necessary.

We usually get the ring out of the freezer the night before we plan to eat it and place it on the table to thaw.
We recommend you place the ring in your freezer when you get it. Like any fresh baked product it will get stale if left out.
We are currently working on a gluten free version, but haven't perfected it yet. We hope to have that available in the near future.
